Crab Quesadillas

A great small-party starter, especially when served along with Crab Avocado Soup.

small, soft flour torillas
Monterey Jack cheese, shredded
lump crab, picked through

These are your three main ingredients. Heat a non-stick fry pan. Lay in one tortilla and top with 1/3 cup cheese. Top with some nice lumps of crab and any combination of the option ingredients listed below.

Top with some cracked black pepper, more cheese and another tortilla. By this time the cheese on the bottom should have melted to the bottom tortilla. Press the new one on top down with your hand or a spatula.

Use a plate, if necessary to flip the quesadilla. Cook the flip side for an additional few minutes. Transfer to cutting board and cut twice into quarters. Arrange on plate and serve, if desired, with dollops of salsa, sour cream and guacamole.

Optional ingredients:
Fresh chopped cilantro
Minced jalapenos
Fresh corn cut from the cob
Diced red/green/yellow bell pepper
Chopped chives
Baby spinch leaves
Sauteed onions
