Brown Rice Cheese Bites

1 egg
1 T. bread crumbs
1/4 cup shredded cheese
1 T. butter, melted
baked brown rice
handful of diced cheese

Preheat oven to 350.

In a bowl beat the egg. Stir in the breadcrumbs, shredded cheese, butter, salt, pepper and an herb like thyme, or a spice like paprika. Mix well.

Stir in just enough brown rice so that the batter thickens and can hold its shape. Fold in a handful of tiny cubes of cheese.

With wet hands, roll into mini-balls or just drop by rounded teaspoon on a greased cookie sheet.

Bake for 20 minutes until puffed and firm and smelling good and the cheese chunks have noticeably melted.
