Crockpot Pulled Pork BBQ

So easy. I make it over 2 days' time. So little hands-on time is required. All the magic happens in the crockpot and all good things come to those who wait.

5 lb. pork shoulder, butt or picnic
1 yellow onion, sliced thin
3 cloves garlic, minced
1/2 cup water
1 to 2 bottles of your favorite BBQ sauce

Into crockpot lay in 1/2 the onions and garlic. Place pork in, fat side up. Top with rest of onions and garlic and the water. Cook on LOW setting for 8 to 10 hours. Cool overnite. Next morning, skim off any fat. Drain pork in a colander. Discard broth. Use 2 forks to shred up the meat. Return meat to crockpot. Mix in the BBQ sauce. Cook on LOW again for 4 to 6 hours. Serve with potato rolls.

Note: Pork slow-cooked in the manner becomes neutral, slightly-tan in color. It absorbs the bbq sauce well but does not always take on the deep red color of the sauce. It is normal for pulled pork bbq to be a neutral color.
