Red Bell Pepper Sauce

This is so fresh tasting and easy to make that you must make it one of your go-to sauces.

2 large red bell peppers
1 medium red onion
4 cloves of garlic
½ cup of fresh basil
¼ cup olive oil

Heat olive oil on medium-high in saute pan. Peel & rough chop garlic and onion. Cut tops off peppers and remove seeds and membrane. Rough chop.

Add garlic to hot oil. Cook one minute - do not burn. Add onions and peppers. Cook, stirring for 12 -15 minutes or unit peppers & onions are soft.

Chop fresh basil and add to saute mix. Stir in. Cook one minute.

Transfer mix to food processor and pulse until sauce is uniform in texture but not liquid.

Transfer to bowl and toss with linquine of your favorite pasta. Salt & pepper to taste.
