Turkey - Thighs & Sauerkraut Turkey Thighs & Sauerkraut

As simple as it sounds and all done in a crockpot. Turkey thighs are a great low-fat source of protein.

1 T. butter
1 cup chopped yellow onion
1 T. oil
salt & pepper
2 lbs. fresh turkey thighs
1 cup chicken broth
1 16 oz. jar sauerkraut
bay leaf
2 apples - peeled, cored and chopped

Heat large skillet over medium-high heat. Melt butter and add onion. Saute for 5 minutes until soft. Transfer to crockpot. Salt and pepper the thighs. Heat oil in the same pan and brown turkey on both sides. Transfer to crockpot. Add bay leaf, sauerkraut and chicken broth. Cook on High for 6-8 hours, or Low for 8-10, adding apples in the last hour.
