Quick Pasta Toss with Spinach & Asparagus

You can whip this up in 10 minutes so have any and everything else for dinnner on stand-by.

1/2 yellow onion or leek, sliced thin
1 clove garlic, minced
1 T. butter
1 T. olive oil

1 pound fresh, refrigerated linguine or fettucini
2 pounds fresh asparagus, chopped in thirds (bottoms discarded)
2 bags fresh, washed baby spinach

3/4 cup of freshly-grated parmesan cheese
2 T. Montreal Steak Seasoning

Start a pot of water to boil pasta. Heat butter and oil in pan over medium-low heat. Add onions or leeks and cook 5 minutes. Add garlic and cook 5 more.

Meanwhile, add asparagus to boiling water. Boil 5 minutes. Add fresh pasta. Stir in spinach. Boil 2 to 3 minutes.

Drain pasta and veggies in a colandar. Transfer to bowl with onion saute, cheese and seasonings. Toss well and serve.
