Chicken Croquettes

2 T. butter
2-1/2 T flour
1 cup milk
2 cups minced, cooked chicken
1/4 tsp. onion juice
1/4 tsp black pepper
2 T. minced parsley
2 eggs, beaten
1 cup dried bread crumbs

Make a simple white sauce: melt the butter in a saucepan, stir in the flour and cook for a few minutes and before it begins to deepen color, whisk in the milk and continue to cook over medium heat until the sauce is smooth and thickened enough to coat the back of a spoon.

Add the chopped chicken and seasonings. Cool this mixture thoroughly and then form into croquettes.

Dip in crumbs, then egg and again into crumbs. Fry in deep fat for 4 minutes or bake on a well greased cookie sheet at 400-degrees for 15-20 minutes until nicely browned.
