Salmon Baked Over Fennel
1 fresh fennel bulb
1/2 c. fish broth/stock
3 tbl. butter
1 tsp. fennel seed
1/2 tsp. nutmeg
salt & pepper
1/2 c. white wine
2 salmon fillets
bread crumbs
shaved parmesan
(((Use a fry pan or sauté pan that can go right into oven, or after the
sautéed portion of the recipe, transfer to a bakingsheet.
Begin by slicing the fennel into 1/4 inch thick slices.
Preheat oven to 450 degrees
Melt butter in your pan and saute the fennel over medium heat
until golden brown. Add your stock and fennel seeds until the stock
begins to carmelize. Season the mixture with the nutmeg and
S & P.
Place salmon on top of the fennel, top with bread crumbs and
cheese, plus sprinkle some white wine on top.
Bake for 8 to 10 minutes.
