A great accompaniment to a fish fry or fried shrimp. Kids love 'em!

1 3/4 cups cornmeal
1/2 cup flour
2 teaspoons baking powder
1 tablespoon sugar
1 teaspoon baking soda
1/4 cup minced onion
1 egg
1 cup milk
1/4 cup water or chicken broth
1 tablespoon chopped parsley
Oil / Shortening for Deep Frying

Heat 4 inches of oil in a saucepan to 350 degrees. Combine cornmeal, flour, baking powder, sugar and baking soda. In another bowl, combine the onion, egg, milk, water and parsley. Combine the wet and dry ingredients. Stir well. Allow to rest for a few minutes. Carefully drop batter by rounded tablespoons into hot oil. Fry, turning once for about 5-7 minutes total. Drain on paper towels. Serve with Tartar sauce.
