Why bother? Because it's simple,
wholesome, inexpensive and
downright delicious.
See below for Mac & Bleu Cheese!

Preheat oven to 350.
Grease a casserole dish.
Boil a pound of your favorite pasta.

2 tablespoons butter
2 tablespoons flour
2 cups milk
1/4 cup minced onion
Paprika
Salt & Pepper to taste
2-1/2 cups grated Cheddar cheese
1 tablespoon butter
1/2 cup fresh bread crumbs
1 tablespoon parsley

We start with what I call the "2 Rue" sauce.
Easy to remember by the number 2.
Melt 2 tablespoons of butter in saucepan over medium heat.
Add the 2 tablespoons of flour. Stir and cook 2 minutes.
Add the 2 cups of milk. Cook and stir until it comes to a
boil and is thick, bubbly and coats the back of a spoon.
This is your Basic White Sauce.
Add the minced onion and paprika. Cook this over low
heat for 10 - 12 minutes for flavors to develop.
During this time, cook your pasta.
Stir in 1-1/2 cups of the grated cheese.
Season with salt & pepper to your taste.
Drain pasta and toss with cheese sauce.
Transfer all this to your greased casserole in thirds,
Adding sprinkles of the remaining cheese in between the layers.
Melt the tablespoon of butter. Add fresh bread crumbs and
Parsley. Sprinkle atop the cheesy pasta.
Bake for 1/2 hour.

For Mac & Bleu Cheese:
Follow recipe above, except instead of Cheddar cheese,
Add 1/2 brick of cream cheese & 6 ounces bleu cheese.
