Peanut Chicken Fingers

Ingredients:
chicken tenderloins, can be bought seperately
or pulled from back of breasts
( figure 2 to 3 fingers per person)

1 cup of peanuts
4 tablespoons of flour
2 eggs, well beaten
salt & pepper
vegetable sortening
1.) have unsalted, roasted peanuts on hand for recipes like this
2.) grind 1 cup of peanuts in a food processor with 1 tablespoon
of flour, salt & pepper. The idea of the flour here is so
we don't make peanut butter.
3.) heat plenty of vegetable shortening in a sauce pan over med-high high (350 degrees)
4.) prepare these three things in three seperate shallow bowls: flour, 2 beaten eggs, ground
peanuts.
5.) first dredge chicken tenders in flour and shake off excess.
6.) next dip into egg
7.) then into peanuts; coat well
8.) gently lower coated chciken tenders into hot oil.
9.) fry for three minutes or until done.
10.) drain on paper towels or kitchen towel.
11.) serve with honey mustard or Major Grey's Chutney.
