Leftover brown rice and fresh ingredient make this is great way to enjoy your garden and clean out the fridge.

Pictured is a Moroccan-inspired version with almonds and raisins.

Olives, cucumber, feta cheese and oregano make a great Greek version.

Here's another one:

2 C. baked brown rice
2 tomatoes, chopped
2 scallions, chopped
1 bell pepper, seeded & chopped
1/2 C. chopped parsley
1/4 C. olive oil
juice of one lemon
salt & pepper

Toss and chill. Experiment with what you have in your fridge, or suit to taste with any of these suggestions:
-diced carrots
-feta cheese
-cubed cheese
-cherry tomatoes
-different herb combinations
