Jewish Apple Cake made with strawberries instead. Wow, what a cake!
Oven preheated to 350
9x3 spring-form tube pan, greased and floured
1/3 cup sugar
1 strawberry, mashed
3 cups flour
2 cups sugar
3 teaspoons baking powder
1/4 teaspoon salt
1 cup vegetable oil
1/4 cup orange juice
2 1/2 teaspoons vanilla extract
1 pint fresh strawberries, washed, drained, stemmed and sliced in half
Combine the 1/3 cup of sugar and the mashed strawberry to make strawberry sugar. Set aside. In one bowl combine the flour, sugar, baking powder and salt. In another bowl combine the oil, juice, extract and eggs. Mix together the wet and dry ingredients.
In the bottom of the greased tube pan, spread 1/2 the cake batter. Top with half of the berries and half of the strawberry sugar. Repeat. Bake for 1 1/4 hours. If not using a tube pan, bake longer to ensure middle is done. Serve with whipped cream or ice cream.
