Chocolate Peanutty Cookies

1 stick butter, or margarine
3/4 cup white sugar
3/4 cup exotic or brown sugar (i used organic exotic sugar by Paisanitos)
1-1/2 cups all-purpose flour
1 1/2 teaspoons vanilla extract
1/2 teaspoon chocolate extract
2-3 eggs WHITES
1 teaspoon baking powder
1/2 teaspoon salt
12 ounces totally sweet chocolate chips (I know you are supposed to use semi-sweet but I used Ghirardelli because it is what I had laying around and they are DE-LIC-IOUS!!)
2 tablespoons of cocoa powder
3/4 cup of peanut butter
optional:
1 cup chopped/ smashed peanuts

Preheat oven to 350.

Melt the butter, or margarine, or both. Stir in the flour, sugars, extracts, baking powder, cocoa powder and salt. Mix until smooth-ish. Add egg whites, and peanut butter and mix until well combined. Finally add in chips (and peanuts).

Drop by the tablespoon onto a cookie sheet about 1"-1/2" apart. Smash them with a fork like you see on peanut butter cookies.

Set on middle rack and bake for 12 minutes!

Steve adds: let sheet pan cool slightly and repeat with remaining batter.
