Preheat oven to 425.

1/4 cup (one stick) unsalted butter
4 eggs at room temperature
1 teaspoon salt
2 cups flour
1 quart whole milk

pinch cinnamon, optional
pinch nutmeg, optional
pinch, grated lemon peel, optional

Place the stick of butter in a 13x9 baking dish.
melt butter in pan inside the hot oven.
Whisk together the 4 eggs.
Whisk in the salt.
Whisk in the flour and milk.
Blend until smooth.
If desired add grated lemon peel or a combo
of cinnamon and nutmeg.
