File these under the category of Set-And-Forget-It, these egg casseroles you assemble the night before and just bake the day of. The two versions below are simple and incredibly flavorful.

Spinach, Feta & Olive
seasoned croutons
frozen spinach
crumbled feta cheese
black olives
beaten eggs

Tater Tot & Onion
frozen tater tots
sauteed onion
beaten eggs

In either batch, place the starch (bread, croutons, tater tots) in a 13x9 casserle first, followed by the other ingredients. In a bowl beat 6 eggs. Stir in 2 cups milk and 1 tsp salt* and some black pepper, and finish by pouring this mixture over the filling. Cover with wrap and chill over night.

In the morning, preheat the oven to 375. Bake for 45 minutes, or until heated through and browned on top.

*if using a salty ingredient like parmesan or feta cheese, reduce the salt to 1/2 tsp.
