Tater Tot Breakfast Casserole

You can easily decrease or increase this recipe per your needs: For an 8x8 square casserole, or a 10-inch round skillet that will feed 4-5 people use the measurements below. For 13x9 casserole to feed more like 6-8 people.

1 pound breakfast sausage
6-8 eggs
1/3 cup milk
2 cups shredded cheese
tater tots to cover seasonings and herbs of your choice

Preheat oven to 400

Use a frypan over medium-hi heat to brown the sausage and break it up into bits. Transfer crumbled sausage to a casserole dish.

Break eggs in a bowl and beat well, adding salt, pepper, herbs, and seasonings of your choice, like, chopped parsley, or some thyme, or Old Bay.

Sprinkle half of the shredded cheese over the sausage. Pour eggs in, then top the eggs with the rest of the cheese. Top the casserole with frozen tater tots in a nice fashion.

Bake for 35-45 minutes, until puffed and golden. When I say puffed, I mean puffed in the middle so you know all the egg is baked. The tots should be crispy, too. It's hard to overcook this because the eggs are essentially being cooked by the steaming moisture of the sausage below them. (yum!).

Let rest 10 minutes before eating.
