Cherry or Berry Crisp

Cherry or Berry Crisp

My favorite berry dessert, bar-none. Can substitute with most any berry or cherry (Bing or Sour) which makes it a great recipe to know by heart so you can whip it up anytime.

1 cup Flour
1 cup of Sugar
1 teaspoon of baking powder
a pinch of salt
1 egg, beaten

1/2 cup sugar
2 T. flour

1 stick melted butter

Melt the butter in your baking pan while preheating the oven to 350. Combine the first set of dry ingredients and add most of but not all the egg to the dry mix. You may not need all the egg. Stir with fingers and crumble the mix until it resembles course meal.

Wash and drain 2 pints of fresh berries. If using cherries, pit them. Place in bowl. Combine the 1/2 cup of sugar with 2 tablespoons of flour. Sprinkle over berries and mix thoroughly.

Pull baking pan from oven and pour melted butter into a cup. Fill pan with berries and sprinkle the crumb mix evenly over the top.  Drizzle the melted butter on top.

Bake @ 350 degrees for 30 minutes or until golden brown.
